Persistent volumes on Docker for Desktop on Windows

More of a comment. If doing this on windows 10 running docker for desktop. Then there are a number of steps for PV to work to local disk.

1) Share the drive of folder to docker. This can be done from the command line when running docker or from the settings UI of docker for desktop under resources.

2) The hostpath needs to be of the form "/c/mt/data where c is the drive shared then mnt and data in my case is the path of folders
