My screens are very different than the ones in the labs (for example I don’t have the boost option in cloud shell). Is this a versioning issue, or am I doing something wrong?

Yes the interface of GCP Console has changed a bit since the video was recorded. You still have the ability to boost Cloud Shell by clicking on the three-vertical-dots button and choose Boost Cloud Shell (it was renamed, before that it’s "Enabled Boost Mode" like in the video).
