Should i shutdown the EC2 before creating the snapshot in this scenario where i want to encrypt a non-encrypted volume and create a new image from this snapshot?

You can do a snapshot on a running instance but it could affect its performance. Also have to consider if it’s doing a lot of disk read/write operations. If possible, it’s usually a good idea to stop the instance and then do a snapshot.
